RECIPE OF THE MONTH | JULY 2020

Apple Cinnamon Oatmeal

Serves 1 Adult or 2 kids

We’ve been having cool mornings and I like to start the day off with something warm on cool days, so I decided to share my Apple Cinnamon Oatmeal. But I also thought, it IS July, even if it doesn’t feel like it this week! So I’m including my Basic Smoothie Recipe with suggestions and variations for a cold breakfast option as well.

INGREDIENTS:

  • 2/3 cups water

  • 1/3 cup milk of choice

  • 1/3 cup apple sauce

  • 1/3 - 1/2 cup oatmeal

  • 1 Tbsp chia seeds (optional)

  • 1/4 tsp cinnamon

  • 1 Tbsp maple syrup

  • 1-2 pinches of salt​

INSTRUCTIONS:

  1. In a small saucepan heat the water, milk, and apple sauce over medium-low heat.

  2. Add the oatmeal, chia seeds (if using), and cinnamon. Cook until bubbling, stirring often.

  3. Add maple syrup and salt, stir to incorporate. Adjust any ingredients to taste: this is a very forgiving recipe and you can tweak it however you like it.​

Basic Smoothie

INGREDIENTS:

  • 3/4 cup orange juice

  • 1/2 cup vanilla yogurt

  • 1 banana

  • 1 cup frozen fruit

  • Water, if needed

INSTRUCTIONS:

Add ingredients in order to a blender or blender-safe container if using an immersion blender. The liquid should come up just below the frozen fruit, so if you need more, add a little water. Blend until smooth.

This makes a sweet smoothie that is kid-approved.

The trick of a good smoothie is to balance the sweetness level with getting all the good stuff in.

VARIATIONS:

  • Liquids: other juices, almond or coconut milk, coconut water

  • Plain yogurt on its own or with maple syrup

  • Fruit: basically anything that can be blended, including canned fruit (make sure to reduce sweetness in liquid or yogurt to balance canned fruit)

  • Greens

  • Avocados for creaminess

  • Cocoa powder

  • Nut butters
