Pork Chops with Apple & Onion

We have a wider variety of apples available at Brook Village Grocery; our usual Macintosh, with the addition of Granny Smith and Red delicious. A tarter apple works well for cooking, the Macintosh will give a more saucy consistency as it dissolves which I think is quite pleasant. But if you pick up a bag of Granny Smith’s we also sell frozen pie crust and you can have a fabulous dessert to go with your pork chops!

  • 4 Pork chops, defrosted and seasoned with salt & pepper

  • 3 apples, peeled and sliced

  • 1& 1/2 - 2 onions, peeled and sliced

  • 1 tbsp butter

  • 1 tbsp olive oil

  • Herbs to taste (thyme, sage, or even cinnamon will work beautifully)

  1. Add your butter & oil to a pre-heated pan.

  2. Sear the pork chops so that all sides are browned with a bit of a crust. (It’s important that your pork is cooked through, but also not over cooked and dried out: an internal temperature of 160 F is ideal.)

  3. Remove from the pan and set aside.

  4. If you need a little more butter, add it to the pan.

  5. Add apple slices, onions and herbs of your choice to the hot pan. Cook your sliced onions and apples till soft through.

  6. Serve pork chops topped with apples and onions.

Mashed potatoes (I like to add nutmeg and lemon juice to my mashed potatoes!) and a salad of romaine lettuce, with apples & walnuts and a vinaigrette of olive oil and Kombucha vinegar.

Bon appetite!
