Recipe of the Week! - August 19th

Easy Ratatouille

This is a great recipe for taking advantage of all the incredible produce at this time of year and it’s a quick and easy variation on a classic. All ingredients are available at Brook Village Grocery.

  • 1 medium zucchini

  • 2 sweet bell peppers

  • 1 med-large tomato

  • 1 onion

  • Four cloves of garlic

  • 2 tsps herbs de Provence

  • 4 tbsps olive oil

  • 2 tbsps honey

  • 2 tbsps white wine or kombucha vinegar

  • Salt and pepper to taste


  1. Preheat the oven to 450 F

  2. Cut the zucchini 1/2 inch into rounds and cut into half-circles. Core and cut the peppers into 1 inch pieces. Cut tomato into chunks. Peel and cut the onion into 1 inch pieces. Peel garlic and leave whole.

  3. On a lined baking sheet toss the zucchini, peppers, tomato, onion and, garlic cloves with 2 tbsp of olive oil and 2 tbsps of herbs de Provence. Season with salt & pepper. Roast the veggies in the. Idle of the oven for 14 min - 16 min, tossing the veggies halfway through roasting.

  4. In a large bowl smash the roasted garlic cloves with a fork. Add remaining olive oil, honey, and vinegar and stir to combine. Add the roasted veggies and stir to coat with the honey-vinegar dressing. Taste and add salt and pepper as needed.
