Roasted Bacon Wrapped Dates with Brie and Walnut Stuffing

We made this recipe for our Open House on the weekend. I made it with smaller dates instead of the medjool dates so we would have a greater quantity of bite-sized pieces, but the medjool dates make more of an impact! All ingredients are available at Brook Village Grocery.

  • 9 slices bacon halved

  • 18 medjool dates, pitted

  • 4 ounces of Brie, cut into pieces

  • 1/4 cup of walnuts

  • Pinch of salt

  1. Heat oven to 375°F and set the oven rack to middle position. Line a rimmed baking sheet with parchment paper.

  2. In a food processor add the Brie, walnuts, and salt. Process until well mixed.

  3. Open the dates lengthwise where they have been opened to remove the pits. If a date isn’t easy to open, slice it lengthwise but not all the way through.

  4. With a small spoon, partially fill the cavity of both sides of the date with your Brie and walnut mixture.

  5. Wrap each date with ½ half slice of bacon and secure with a toothpick.

  6. Place the date on the prepared baking sheet and repeat until all dates have been filled.

  7. Bake the dates at 375°F for 10 minutes. Remove from the oven and turn the dates over. Bake an additional 8 minutes.

  8. Set the dates aside until cool enough to eat, serve!
