Deviled Eggs with Smoked Paprika

This recipe is one of the appetizers we'll be serving at our Open House on July 6th! All the ingredients are available at Brook Village Grocery.

  • 12 eggs

  • 3/4 cup mayonnaise

  • 2 tsp mustard

  • salt & pepper to taste

  • smoked paprika

  • 1-2 green onions, sliced

  1. Place eggs in a pot of cold water and cover by 1 inch or so. Add a pinch of salt and cover with a lid.

  2. Bring water to a boil, reduce heat to med-high and boil for 6-7 min. When done, remove eggs from pot an put in a bowl of ice water for a few minutes. Peel and rinse the eggs.

  3. Cut each egg in half, lengthwise, putting the eggs in a bowl or food processor. Set egg whites aside on a plate.

  4. Add mustard and mayonnaise to egg yolks and whip with a fork or process till smooth. add salt and Pepper to taste. spoon the mixture into the hole of each egg white.

  5. Sprinkle with smoked paprika and garnish with green onion.
