Orange Coconut Cake

A recipe of Isabel Vieira’s (Schön at Brook Village Grocery’s mom) family who lived in Mozambique and brought tropical flavours back to Portugal. Isabel then came to Canada with her parents and brother in 1968. All the Ingredients are available at Brook Village Grocery.

INGREDIENTS:

Cake:

  • 6 eggs, seperated

  • 1 1/3 cups sugar

  • 1 2/3 cups margarine

  • 2 2/3 cups flour

  • 2 orange rinds, grated

  • juice of 3 oranges

  • 1 tsp baking powder

Syrup:

  • 3/4 cup orange juice

  • 1tbsp sugar

  • 1tbsp orange liqueur, such as Triple Sec or Grand Marnier

Topping:

  • 1 cup unsweetened shredded coconut

  1. Heat oven to 350 F.

  2. Grease a 9 inch baking pan and coat with flour.

  3. In a mixing bowl or with an electric mixer beat margarine with sugar until light and fluffy. Mix in egg yolks.

  4. In a separate bowl stir baking powder into the flour, then add to egg batter.

  5. In another bowl beat egg whites until stiff, fold gently into bater until just combined.

  6. Pour into baking pan and bake 30 to 45 min or until an inserted toothpick comes out clean.

  7. Cool for 15 min before removing from pan.

  8. Place the cake on a serving plate and moisten with syrup, top with shredded coconut.
