Chicken Pesto Parmesan

This recipe was thought up by a regular customer at Brook Village Grocery and we featured a photo of it on our Instagram and Facebook Pages, so if you were looking for this recipe, here it is! All the Ingredients, besides the actual chicken breast, are available at Brook Village Grocery.

  • 1/2 cup canned chicken broth

  • 3-4 chicken breasts

  • salt & pepper, to taste

  • 2-3 tbsps pesto

  • 1 tomato, thinly sliced

  • 1-1&1/2 cups grated parmesan

  1. In a pot large pot, pour in chicken broth. Bring to a gentle boil over medium heat.

  2. Meanwhile, season the chicken breast with salt and pepper to taste.

  3. Add chicken to the pot, cover with a lid.

  4. Poach chicken until cooked through, about 12-15 minutes.

  5. Turn oven on to broil.

  6. Place chicken breast on a lined baking sheet (with parchment paper or a silicone pan liner).

  7. Cover the chicken breasts with pesto, about 1/2 tbsp or less depending on the size of the chicken breast. Layer tomato slices, two per breast, to cover pesto.

  8. Top with grated parmesan to taste.

  9. Broil in oven, keeping an eye on it, until cheese is melted and bubbly, 5-10 minutes.
