Recipe of the Week! - March 25th


Apricot Muffins

All of the ingredients required for the following recipe are available at the Brook Village Grocery.

INGREDIENTS:

  • 1 cup chopped dried apricots

  • 1 cup boiling water

  • 1 cup sugar

  • ½ cup butter or margarine

  • 1 cup sour cream

  • 2 cups Robin Hood cake and pastry flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt Instructions

1. Soak diced apricots in boiling water for 5 minutes.

2. In large mixing bowl, cream sugar and butter until fluffy.

3. Add sour cream, mix well.

4. Combine dry ingredients; Stir into creamed mixture just until fully mixed.

5. Drain apricots, pat dry with paper towel and stir into batter.

6. Fill greased or paper lined muffin cups.

7. Bake at 400 degrees for 15-20 minutes or until tests done
