Recipe of the Week! - November 26th

Sun-Dried Tomato Hummus

All of the ingredients required for the following recipe are available at the Brook Village Grocery.

INGREDIENTS:

1 19-oz (540 ml) can of chickpeas, drained and rinsed

½ cup (125 ml) tahini (sesame paste)

1 cup (250 ml) plain yogurt 1 tsp (15 ml) hot sauce

The juice and zest of 1 lemon

2 clove garlic, chopped

1 bottle sun-dried tomatoes packed in oil (about 1 cup/270 ml)

A sprinkle or two of salt and lots of freshly ground pepper

Puree the chickpeas in your blender or food processor. Add tahini, yogurt, hot sauce, lemon juice and zest, garlic, salt and pepper.

Keep pureeing and add tomatoes. Check your consistency here and if you prefer add a bit more yogurt or a little splash of water to thin the texture.

Now taste and adjust your seasoning and you’re ready for the dippers!
