Michelle's Energy Bars


3 cups of organic rolled oats 2 Grated apples (peeled and cored) ½ cup chopped dried apricots ¼ cup chopped almonds ¼ cup pumpkin seeds ½ cup pumpkin puree ½ cup coconut sugar ¼ cup honey 1 tsp vanilla extract or grated vanilla bean 1 Tbsp cinnamon 1 tsp nutmeg ½ tsp Grey Sea Salt ¼ cup Thyme Passages Tea or Apple Passion Tea in concentrate 1 organic chocolate bar


  1. Preheat the oven to 350 F. Spray or butter a square baking pan and set aside.

  2. In a large bowl combine rolled oats, apple, apricots, almonds, puree, coconut sugar, liquefied honey, tea, vanilla and spices. Mix until everything has been combined and are moist.

  3. Press the mixture into the pan. Bake in the oven for about 30 minutes until golden brown. Cool on a cooling rack for a few minutes while you do 4.

  4. Over a double boiler, melt the chocolate bar to a smooth liquid. Pour over the oatmeal mixture and smooth out with a spoon. Let everything cool and then cut into bars and put in an air tight container.

Note: To make the tea in a concentrate…Bring water to a boil and combine 1 tsp of tea with ¼ cup of water. Let it steep for 10 minutes before adding to the recipe.
