Recipe of the Week! - June 4th

Vegan Lentil Dip

All of the ingredients required for the following recipe are available in store. Enjoy!


Part 1 - Dressing

1/3 cup olive oil

1/4 cup red wine or apple cider vinegar (scant)

1 tbsp Dijon mustard

1/2 tsp cinnamon

1/2 tsp cumin

1 tsp curry

1 tsp lemon juice

2 tbsp maple syrup

1 whole clove

Part 2 - Salad

1.5 cups cooked lentils (dry or canned)

1 red pepper chopped small

1 cup dried currants

2 green onions chopped small


Whisk the dressing ingredients together in a small bowl. In a separate bowl, mix the other ingredients together. Pour the dressing over the salad, mix together, and marinate in the fridge for 24 hours. Remove the clove before serving.

The dip can be kept in the fridge for several days.
